How to roast garlic

I usually roast it wrapped in aluminum foil because it speeds up the cooking. Cut off the top, drizzle generously with olive oil. Twist the foil at the top to seal it. You can also throw this on the barbecue, by the way.

There are dozens of ways to roast garlic. My two favourite ways are:

Whole roast garlic: cut the top 1/2 inch of the bulb off, Leave right side up, sprinkle with salt, and put about 1 tsp of butter (cold or melted, either is fine) on top. Put it in the oven for about 40 min at 350, until tender. You can cook it at different temperatures depending on what else is in the oven, just adjust the time accordingly.

Another way to roast garlic is in a mixed vegi dish. This seems to be very popular with British cooks like Nigella Lawson and Jamie Oliver. Cut up some potatoes, and/or other root veg. Add garlic cloves, still in their skins. Sprinkle everything with olive oil, salt and possibly herbs or spices, mix well, and bake in oven for about 40 min at 350 (adjusting time if you want to cook at a different temp).

I cut off the top, about 1/2 inch, place cut-side down in olive-oiled baking sheet or pyrex, drizzle a little more olive oil and roast. I usually roast with other vegetables. When tender, I squeeze out the cloves from the head. Very simple.
