I have a question about the recipe "Butternut Squash Soup with Miso and Coconut " from Kenzi Wilbur . I never have the right color miso for a given recipe. Would this be weird with red miso?
I find miso is seasoning. The color might be richer, but the taste will be in line with autumn richer dishes.
White yellow miso are more spring. While red the richer red is more winter/autumn.
I almost always use red miso--it's far more salty and earthy, so adjust any other seasoning in a dish calling for white or yellow miso.
