I love making dulce de leche by simmering the condensed milk in a can (3+ hours) -- how long can I store the unopened can? Should it be refrigerated?

It seems like it would keep at room temp for a long time. It's still in an aseptic container, so I don't see why boiling it would change it's shelf-life dramatically. Of course I'm not a food scientist, so I could be completely wrong.
