Can I use raw chicken when cooking jambalaya? Whenever I cook it beforehand, And then cook it the final time, it seems to get dry.

if you cook it ahead, only add it back in about 10 min before recipe is finished and it should be fine. It only needs to reheat at that point.

My recipe calls for it to be browned first. I wouldn't overcook it at that time, then you won't overcook it.
