...e whites at the last minute. Is it possible to make them ahead of time and then reheat them? Or make the batter and eggwhites separately, keep them in the fridge for a few hours and then pop them in the oven whilst we're eating mains? (This is one of my favourites by the way). Thanks!

yes. make in advance and reheat, covered, in pan of hot water in oven. Also delicious served cold or room temp.
