What's the best vegetable oil for baking/braising chicken in a sauce ?

Totally agree with Emily, olive oil.

If it's cooking at a medium heat, olive oil would work. If you're cooking it at pretty high heat, you want to use a more stable oil like avocado oil or peanut oil. I'd avoid canola/corn/soy oil as those are very unstable in heat.
