Vegan Lentil Recipes

I am vegan and I'm currently trying to incorporate more lentils into my diet. Does anyone have any creative ways to prepare lentils/creative vegan recipes using lentils? Things that I could take to work for lunch would be an added bonus! Thanks in advance :)

Even just plain lentil soup is lovely. Saute onions, carrots and celery if you use it, in oil of your choice. Keeps the vegetables from tasting simply boiled. Ass sorted and rinsed lentils and water. Add chickpeas for more protein. Fresh or frozen spinach (liquid as well).

I also often sprout lentils and keep a jar of them in the fridge. They're great tossed into salads, or sautéd with greens or other veggies.

Also, I make Amanda's crispy lamb and lentils without the lamb and it's also terrific. I serve it with lettuce cups to roll it in and some roasted eggplant or cut up cucumbers and pita.

Lentils braised in red wine are terrific...start off with by sauteing 1/4 cup each of carrots, onions, celery + 2 garlic cloves in olive oil until onions turn translucent add 2 cups lentils, 2 bay leaves & a thyme sprig, stir to coat then add 2 cups dry red wine + 2 cups veg stock + 2 or 3 shakes of Bragg Amino acid...bring to a simmer cover & cook till tender....THEN you can eat them as is (terrific over mashed root veg) OR make amazing veg burgers by take 1 cup lentils + 1 cup sauteed mushrooms + 1/2 cup setian pulse in blender..add a few bread crumbs and a few tablespoons of tahini to bind... taste check seasonings (can add smoked paprika, some more garlic, salt etc) form in to patties and pan sear - or freeze between pieces of wax paper then wrapped in saran for later.

I find the simplest way to cook lentils is in water with enough kosher salt and a few garlic cloves. You could also add carrots, onions, and bay leaf if you wish. Either way, they turn out just fragrant enough. I'll then add them to salads or dress them in a vinaigrette on their own. Another easy preparation involves sauteeing some onions, adding some spices like cinnamon and cumin, tossing in some canned tomatoes and finishing off with coconut milk. But, the best thing to do is search lentils on the site. You'll come up with lots of great community picks. Smitten Kitchen also has some great lentil recipes.

Lentils are great in salads. My favorite is a mixture of French lentils with sautéed shallots, red pepper and mushrooms in a simple vinaigrette. There are dozens of lentil soup and dal recipes on the internet that can be made vegan if they aren't already. Also some homemade veggie burgers use lentils as their base.
