Considering making a shaved raw asparagus salad with vinaigrette for Easter. How far in advance could asparagus be shaved?

Keep them in acidulated water, water and acid, I use lemon juice but you can also use anything acidic like oranges or vinegar

You could shave the asparagus the day before and save it in an airtight container in the fridge. Just dress right before serving
