I'd like to make a softer bun and most hamburger buns seem to have egg. I have a good polenta roll that goes well, but it is a bit too dense.

King Arthur Flour has a recipe for hamburger or hot dog buns, just omit the egg wash and you should be good. Sorry don't have a link. Stupid iPad is not cooperating.
