How to make savory marshmallows?

I'm having a dinner party with advanced cooking and I want some cool dishes. Any molecular or just very cool and new American dishes? How to make savory marshmallows? raw garlic marshmallow or the technique for savory marshmallows. Not very chewy but not a form, semi set.
