I am making a 8.3lb pork shoulder with bone at 325. How long should I keep it in? All recipes I find goes for 3-4lbs

I make mine cuban style low and slow and it takes 5 hours plus.

I always cook mine at 250 all night. Up to ten hours. I use a dry rub

Are you doing pulled pork? If so, should take around 6-8 hours @ 325. Cooking it to a temp of 190+ until the bone pulls free from the meat.
