I am making a boneless pork shoulder 2 Lbs. Slow roasting in an oven at 275. The recipe I am following uses a bone IN shoulder, 7 Lbs cooked at 275 for 10 hours. Does my 2 lbs need that much time?

Your 2 lbs. should take much less time, both because it's smaller, and because there's no bone. I would start checking it for doneness after about 2 hours.
