my homemade corn tortillas must I cook the whole batch or is it OK to pinch off some and make 'em as I need 'em 2-3 days?

You can wrap in plastic wrap for 24 hours, but for longer than that, I would pinch off golf ball sized amounts and freeze them. Sort of like cookie dough.
