Let's be sure we know what fish you're talking about. Is it the Pacific cod, which is indeed a relative of the Atlantic cod? Or is it the black cod, also known as sablefish. That's another animal all together.
In Barcelona a couple of months ago we had croquetas de bacalao (spelled slightly differently in Catalan, but can't remember!) served with a smoked paprika aioli - one of the best tapas ever. My mouth is watering just thinking of them! Unfortunately, I don't have a recipe, but you could use/adapt the brandade croquettes Pegeen linked above.

Glad you asked this - I generally love all kinds of fish, but I can't stand cod - to the point where I feel aggrieved when it is served somewhere. No idea why, except maybe I was served a bad pice of cod in a past life? (Was it you Pegeen?) Anyway, reading people's responses and some of these suggestions has piqued my curiosity. Heading to Cape Cod next week - armed with these recipes I will have the perfect opportunity to try again!
TobiT - Unfortunately cod is pretty much fished out in the northeast. You’d do better spending $ on striped bass or blue fish. Most people dislike blue fish but it's really wonderful if you learn a little about how to cook it.
Anyway, being in Cape Cod is wonderful by itself.
Oh yes - my go-to when I'm there is bluefish (we can't really get it here in the Midwest). And striper too! Won't feel bad now if I save the cod for another time...
Cod is my fav fish!! Rub with Dijon mustard, roll in panko, and sautée over medium-high til golden brown. Squeeze a lemon on top and you're good to go. :)
I must have been a cod fish in a previous life - I love it.
