Put them in the fridge Friday. Also take them out about an hour before you cook them and bring them to room temp. Salt them and dry them off with a paper towel before grilling! Enjoy!!!!!
Put it in the fridge ASAP. And as mentioned above, take it out of the fridge an hour ahead of cooking to allow the steaks to come up to room temp. This will allow for a more even cook. Also, once on the counter, give them a liberal sprinkling of salt to bring out the natural goodness. It's science.
Yes, the rule of thumb with frozen animal protein is - long and slow. I take meat out two days before I want to cook it. And I always "temper" my meat at least an hour before actually cooking - I put in on my counter to take the chill off. Cooking cold meat can create a very tough eating experience.
