I have a question about the recipe "Spanish Roasted Potato Salad" from MySocialChef. how far in advance can I roast potatoes? Do I dress then or when I will serve?

This has actually come up before (https://food52.com/hotline...) -- Monita suggested roasting the potatoes a day or two ahead of time, and then dressing the potatoes when you're serving them.
