Why not a healthful soup? There's something a little special about a soup as an appetizer as opposed to a thrown-together salad. Gazpacho would be perfect at this time of year - and it's not too filling that one couldn't then enjoy a good dinner. Take a wedge of Brie cheese, place it in an oven proof serving dish. Sprinkle with diced sundried tomatoes that were stored in olive oil. A splash of fresh olive oil on top and a dash of fresh herbs you have in the fridge. Bake in a 425 degree oven until the cheese melts, serve with toasted baguette rounds, or just plain toast. My goto easy and quick appetizer, there will be none left.
If you are taking it, you can "prep" the platter with the olive oil & balsamic there in less than a minute and then toss on the skewers....and not worry about spilling on your cute outfit during transport!
That's exactly what I was thinking. I have the perfect oblong pyrex container to transport the prepared skewers and I'll take the olive oil and vinegar separately. Just dusted off my nice white platter...and my cute outfit. :0)
A super easy summer appetizer is a caprese bite. On a longer skewer or forked toothpick, take a grape tomato, a mini mozzarella ball and a basil leaf and skewer. On a beautiful white tray pour a very good quality olive oil and then drizzle balsamic vinegar over. Artfully arrange skewers. Your guests will swirl the skewer and pop the whole thing in their mouth....delicious! Don't forget to put out a small container for the empty skewers.
Freshest radishes (or other bite-size crudités) you can find + the highest-quality butter you can find + flaky finishing salt. Dip the radishes in the butter, dab in the salt, enjoy. :) Add some good bread to make it a little more substantial.
