Roasted cherry tomato storage issue

To deal with the huge influx of cherry tomatoes, I have been slow roasting them. What is the best way to store them? I thought to put them in jars (not heat sealed) cover in olive oil and hopefully not refrigerate but thought to ask before trying. I'm not looking for them to last more than a week or two. Safety issue?

Yes, that's a safety issue. Refrigerate them, and eat them up. Or freeze them.
