I've been making a mexican fruit salad/slaw. Watermelon, green chili, jicama, grapes, red onions, orange slices, Crumbley Queso Blanco, Cilantro.....dress that with olive oil, lime juice and a touch of cumin and good crunchy salt.
Try a search in the hotline ( Fish Tacos, Q&A) there are lots of suggestions for sides specifically for fish tacos. I love a crunchy, vinegar-based red cabbage slaw and plantain "fries."
Cabbage slaw! When I lived in San Diego and ate fish tacos often, this was always the side I loved. Finely shred green cabbage. Add into a bowl with a handful of chopped cilantro. Then heat 2 tablespoons olive oil over medium heat. Add 2-3 teaspoons of cumin seeds and cook for a couple mins until nice and toasty. Pour the oil and cumin seeds over the cabbage slaw along with a couple tablespoons limes juice and some salt. Stir. Let it sit for 30 mins or so before eating so the flavor develops. Yum!
I grew up in Mission Beach and my mom still lives in La Jolla. When I visit, I make sure my plane gets in early enough to be able to go to Rubios for the first of many fish tacos of the trip.
Your slaw sounds delicious. I never thought to wilt the cabbage with warm oil.
Thanks, Susan! I got the idea from a similar Indian-style cabbage dish. I lived in San Diego (in South Park and La Jolla) for 5 years and am a big Rubios fan :)
Ralph Rubio and my brother surfed together in baja. I love the one on Garnet. It's fun to grab a couple of Especials and head down to Crystal pier to watch the sunset. I'd love to figure out how they make their hot red sauce. It's great on eggs. :)
Rice and beans, if you're not already serving beans in the tacos
If you don't want to use beans with rice, then just red rice (long grain white rice, tomatoes, garlic, scallions, tomato sauce). It should be easy to find a recipe through a search.
Quacamole (of course!)
Corn salad with halved cherry tomatoes, basil and queso fresco tossed with a little mild vinaigrette.
Something with sweet potatoes? Chop coarsely (parboil - optional), then roast with olive oil, salt and pepper. Mashed with a little hot sauce if it suits your menu.
