Can ghee replace butter in baking?

It depends. Think of ghee as oil because the water has been evaporated out and the milk solids have been strained out. So..if oil would work, ghee will as well. It has more body than oil because it is a saturated fat. I used ghee in some basic cc cookies. They were a little flatter than normal and chewier, but I like that in a cookie.
