Was your post tagged "pickling"? In that case just use vinegar and skip the gin. If you'd like to skip alcohol altogether, and you can easily get some, you could add juniper berries to the pickling juice to get the base flavor of gin without the alcohol.

Assuming you mean in a cocktail, do you have a specific one in mind? Gin gives me a massive headache/queasy feeling. I think it's the juniper - same reaction to it in cooking (e.g. with venison and gravlax.) But I digress...in many drinks, you can sub vodka. Blasphemy for martini purists, but to quote Rhett Butler....

Alternatively, if it's the flavor you want, without the alcohol, you can add juniper berries. If you're shopping for them, they are the spice section.

Thanks Greenstuff, but I meant that I think I have a bad reaction to juniper - the venison, gravlax (and come to think of it duck) I've had or made with juniper berries trigger the same response as gin. Luckily for me, I don't love the flavor of gin anyway!

Not you, amysarah! You made it graphically, almost poetically, clear, and it wouldn't even put you in a room with cut juniper boughs! I meant bigal. Like pegeen, I figured the question maybe related to getting a juniper taste into some pickles.

Ha, funny! I didn't notice the pickling tag...or maybe I just have cocktails on the brain ;)

There is no substitute for gin. At least in my Martinis. :)
