I want to do two 7 lb pork shoulders together in the oven in a roasting pan, kind of low and slow. The end goal is sort of pulled pork. Cover or not?

I was planning to cover with aluminum foil and do it at round 250 for about 12 hours, or 190 degrees.

Great plan, I usually don't cover mine w foil until around hour 3 or 4. and usually take it to 192 to make sure the fat has melted completely. Are you using a rub or injection?

Thanks for the input. I'm doing a fairly traditional rub over a splash of soy sauce.
