Christmas Eve dinner help! Slow roasted pork loin.

How do I slow roast boneless pork loin (two 2.5lbs pieces) so it's ultra tender? My slow cooker isn't big enough so I have to cook it in the oven. Covered or uncovered?

Definitely covered so the steam helps moisten the pork. Low temp, several hours.
