How do I slow roast boneless pork loin (two 2.5lbs pieces) so it's ultra tender? My slow cooker isn't big enough so I have to cook it in the oven. Covered or uncovered?

Maybe try a festive recipe like this: http://food52.com/recipes... or this: http://food52.com/recipes... And both are cooked uncovered.
Definitely covered so the steam helps moisten the pork. Low temp, several hours.
