Making sweet potato pie for tomorrow. It has eggs and evaporated milk in it. Baked, obviously. Do I need to refrigerate tonight after it cooks or am I ok to leave at room temp for tomorrow?

You should refrigerate it to be safe.
As long as eggs and milk are cooked, it is safe to leave the pie out. You only need to worry about uncooked dairy. Same goes for meats. That's why it's okay to bring fried chicken to a picnic lunch.
