Yes, definitely. When you defrost them, do it in the oven at a high temperature (like 435) so they become crispy on the outside.

Yes, definitely. Agree with Liza's Kitchen...these are a variation on latkes, which always freeze well.

I would think they might not be as crispy when you reheat them but they will probably taste fine.
