I'm baking a caramel pecan tart. It is enveloped in pastry and glazed with chocolate. Can I make ahead and freeze, glazing after it is thawed

Yup, shouldn't be a problem. You may need to throw it in the oven for a few minutes to get the pastry crispy again as freezing tends to make it a little mushy.
