Sweet and Savory Overnight Roast Pork on this site is terrific and a pretty simple, straighforward recipe. I will say I cheated and cooked it at about 300 degreees for a shorter time but still came out great. I never considered myself a pulled pork fan but I will make this again.

There's a great recipe in Rick Bayless's Mexican Everyday; it's one of my go-to recipes for feeding a crowd. The recipe is for "Smoky Pork Tinga Tacos with Avocado and Fresh Cheese." In a slow cooker, start with a layer of yukon gold potatoes cut into 1/2-inch cubes. Then add the pork (the recipe calls for cutting it into cubes, but I'm pretty sure I've done the whole piece, especially if there's a bone; just cook it longer). Top with a mixture of:
- one 28-oz can diced tomatoes in juice
- 3-4 chopped canned chipotles en adobo
- a bit of the adobo sauce
- 1 T Worcestershire sauce
- 1 t dried oregano
- 3 cloves garlic, minced
- 1 white onion, sliced 1/4-inch thick
When it's done, cook 4 oz Mexican chorizo and sprinkle it on top of the mixture in the slow cooker. Serve with tortillas, queso fresco, and sliced avocado.
I'd make kalua pork in the slow cooker. Take butt, rub with 1tb of salt and a 1 tb of liquid smoke. Put in slow cooker and cook on low for 8-10 hours. Check for tenderness after 5 hours. How much time depends on your cooker. You want tender meat that can be easily shredded with 2 forks, but you don't want to overcook it because it will become dry and stringy, & really greasy. When it's tender, shred meat with fingers or forks. Add a little bit of the liquid if you want it more moist. Serve as part of a Hawaiian themed dinner with rice, sweet potatoes, and salad. Or use like any pulled pork (e.g. sandwiches, sliders, etc). I freeze what we can't finish in one sitting. It freezes well in Ziploc bags.
