Can you use low fat or skim milk or does it need to be whole?

I would say skim/2% would yield few, if any curds.

You CAN, but I wouldn't. There's such a difference in both flavor and texture of whole milk.

I don't even like putting anything less than whole milk in my coffee, so I should've known better! Of course, you're right.
