It's really up to you. Will the ribs fit into the pot without cutting? If yes, then why cut them? Will they look prettier cut? Then cut them. Cassoeula is one of those dishes that everyone and their Nona has a family way of doing things. Cutting the ribs might effect cooking time, but so will the breed, marbling and age of the pig. This is one of those dishes that's ready when it's ready and is indeed at it's best when it's made the day before serving and gently reheated.
