What would pair well with this maple pork ribs recipe?

Here is the maple pork ribs recipe:
PREP: 10 MIN. • C0OK: 5 HOURS.

l pound boneless country-style pork ribs, trimmed and cut into 3-inch pieces
2 teaspoons canola oil
l medium onion, cut into 1/4-inch slices and separated into rings
3 tablespoons maple syrup
2 tablespoons spicy brown or Dijon mustard
1 In a large skillet, brown ribs in oil on all sides; drain. Place ribs and onion in a 1-1/2-qt. slow cooker. Combine syrup and mustard; pour over ribs. Cover and cook on low for 5-7 hours or until meat is tender.
Yield: 2 servings.

I have made this before, but it always seems like it’s missing something. Seeing as you cut the meat into pieces, I was thinking of maybe serving it with pasta or potato noodles. Thoughts?

Baked beans of some sort, from Boston baked, barbecue baked or tomato baked.

Grated carrot salad with a light vinaigrette and lots of herbs.

For sure it needs vegetables and a starch. Because it is stew-like I would naturally lean toward rice as the starch.

From a flavor profile, it is glaringly missing acidity which will cut the fat and sugar. Adding a side dish like a salad would be one option. Another would be to add a pickle like Korean kimchi or its Southern relative chowchow.

I can see how it was served by itself it would taste incomplete due to the absence of acidity.

I’d go southern and serve it with cornbread or biscuits, some stewed greens like collard greens, and something sharp and vinegary like a cucumber and tomato salad (perfect for this time of year).
