How many days in advance can I make the Mortadella Smear recipe featured in Saveur Mag.--recipe is from the Purple Pig rest. In Chicago??

I'd be looking at three days in advance as the limit at which I'd be comfortable making it. If there wasn't cream in the recipe, I'd be comfortable at five days. Having had it at the Purple Pig though, it wouldn't survive three days.
