one sephardic version - delicious when I made it last year - from Moshe Basson is very simple. Equal weight of chopped dates or date paste (called Silan) abs chopped walnuts. Joan Nathan also offers various haroset from around the world on her books, e.g. one from Italy with chestnuts. Have a look.
