I am making slow cooked chicken with Leeks , White Wine & Forty Cloves of Garlic and need a side dish that is gluten free. Any thoughts?

Mushroom Risotto using shiitake and crimini (baby bellas). This will play nicely with the wine and garlic. Definitely include some fresh grated parmesan and a bit more white wine. And is always gluten free.

Or small roasted potatoes tossed with salt, pepper and rosemary--maybe a bit of garlic, too.

I would serve it with a nice simple pilaf to soak up the sauce.
