I'm just starting to play around with coconut butter. Anybody had any fun with this?
I've used it to replace butter in a fruit crisp topping to make the fruit crisp vegan. It worked out really well in that application.
I use it across the board...to bake with and to make anything where olive oil/butter would be used also in Indian and Thai inspired dishes. I love the flavor and don't find the coconut flavor to be overpowering. Visit my blog for some recipes.
