What is a substitute for dry milk powder??

Milk powder is also added to bread recipes to enhance browning; for gluten-free goods which don't like to brown at all it really enhances the look of the baked goods.

Its probably there for flavor enrichment and tenderizing. You could leave it out or use cornstarch for a similar, albeit less successful, product. Is it a bread machine recipe?
