I put a cherry or grape tomato in the shell with a small piece of fresh mozzarella (or bocconcini) and garnish with basil. Easy and seasonal.

A little piece of brie cheese topped with a dab of fig jam. Run them back into the oven for a few minutes - just until the brie is melted....YUM.

I would fill with chopped shrimp salad. Chop up some cooked shrimp, toss in some shallot, finely chopped celelry and dill, and bind with a dab of mayo. Squeeze in Lemon juice and mix together. Top with zest of the lemon or if you like kick, chili or red pepper flakes.
