Traditionally, Fesenjoon is made with chicken. I would use both breast and thigh. The flavors of the finished dish are bold and tangy so if you can find a superior quality maize-fed chicken, that tends to be slightly sweeter in taste, it will serve to compliment the pomegranate and walnuts.

We only use chicken. Thighs work well.

If you Google "pomegranate Fesenjoon" almost all the recipes that come up call for chicken. Myself, I am familiar with chicken, turkey, and duck and I think chicken thighs and drumsticks would be the closest match to duck.

Turkey is its own beast and not particularly similar to duck, either in size or flavor.
