For simplicity, multiply quantities by 1.5x and there might be some leftovers (or not).
Personally, I'd just double the recipe, split between three baking dishes, and serve two at the dinner. Cooked potato gratin can survive in a fridge for nearly a week, and it also freezes well. For the latter, just portion into individual servings and freeze separately for convenient defrosting.

She's starting with 6, so to go to 8, she needs to multiply by 1.3333 or 4/3. I suggested a simpler multiplication factor of 1.5.
A multiplication factor of 1.25 for an original 6 serving recipe would result in 7.5 servings (6 x 1.25).
