Another tip - if you're using a big foil roaster pan, put it on a sheet pan before you load it up and put it in the oven. Much safer and more reliable to handle.

Sure, you can hack it! You can sear in a heavy-bottomed skillet, then braise/roast in the throw-away pan tightly covered with foil. You'll probably want to keep a close eye and add extra liquid if it looks like it's getting dry on the bottom, so that it doesn't burn.
