Another appetizer question

I'm making these delicious puff pastry bites. Any way I can make them the day ahead and reheat without them tasting stale? (BTW I can't recommend these highly enough. They smell amazing and are beyond yummy)

Puff pastry is known to sog on me, so I'd probably make the onion mixture in advance and then day of just cut the puff, add topping, and bake.
