I want to make Tom Collicio's Parker house rolls. If I make today will the be too stale by tomorrow?

Nope, they'll be fine!! Just keep them in an airtight container. You could rewarm them in a low-temperature oven (covered in foil if you don't want the crusts to dry out) so that the butter melts in. :) Yum!!!
