Summer dinner party menus

I asked a menu planning question about a week ago, and we had our party last night with much success. Now we're hooked and want to have another.

Hit me with your favourite summer dinner party themes and menus, bonus points for fancy-ish with 5+ courses or dishes.

An Italian dinner party would hardly have less than 5 courses !
You challenge? here it is:

Starters:
1. Baby Potatoes with Calabrese Curcui and Silana Provola Cheese
2. Baby Potatoes with Tropea Schallots and Silana Provola Cheese
3. Baked Purple Aubergines Pizzas with Silana Provola Cheese, Cherry Tomatoes and Capers
4. Grilled Purple Aubergines Pizzas with Rucola, Parmesan Cheese and Mussles
Primo Piatto:
5. Saint Paul de Vence Chayote Mousse with Mussels and Cime di Rapa
Main Course:
6. Scallop, Shrimp, Salmon and Cod Fish pie with a Mediterranean twist served with Basil Mashed Potatoes
7. Lime sorbet: to rinse the taste of fish
8. Cheese platter: Matured and Fresh Pecorino and Matured Caprino Calabrese Served with a Red pepper compote and ricotta cheese swirled with ‘Nduia
9. Dessert: Almond Meringue served with Butter Sauce and Berries,
10. Coffee (espresso or filtered) served with a sesame biscuit

Sorry, no particular theme but for multi-course elegance I vote for a cold fish course. Poached salmon with dill and/or cucumber sauce comes to mind or chilled shrimp of some description. Crab, lobster or mixed seafood salad served with avocado or tuna carpaccio. Book end this with a simple opener and a hot but unfussy entrée ( maybe grilled).

The cold fish option sounds good. For the menu I was thinking a Thai style.
1. Coconut Lemongrass Kefir Lime Poached Barramundi (serve cold)
2. Pork and Mushroom Steamed Dumplings with a green chili dipping sauce (make ahead and freeze)
3. Vegetable Spring Rolls with thai basil, mint, cilantro and a peanut sauce (a great palate cleanser before the main dish and make ahead and keep in fridge for a few hours)
4. Drunken Noodles a fantastic spicy noodle dish
5. Mango and Sticky Rice to wrap up the meal

Grilled Steak, Easy Shrimp Scampi with Cointreau,Fresh Basil Pesto on Linguini, Classic Caesar salad with a wedge of Parmesan on the side for guests to shave on themselves. Dessert Baked Strawberry Rhubarb Pie
