Grilled Steak, Easy Shrimp Scampi with Cointreau,Fresh Basil Pesto on Linguini, Classic Caesar salad with a wedge of Parmesan on the side for guests to shave on themselves. Dessert Baked Strawberry Rhubarb Pie

The cold fish option sounds good. For the menu I was thinking a Thai style.
1. Coconut Lemongrass Kefir Lime Poached Barramundi (serve cold)
2. Pork and Mushroom Steamed Dumplings with a green chili dipping sauce (make ahead and freeze)
3. Vegetable Spring Rolls with thai basil, mint, cilantro and a peanut sauce (a great palate cleanser before the main dish and make ahead and keep in fridge for a few hours)
4. Drunken Noodles a fantastic spicy noodle dish
5. Mango and Sticky Rice to wrap up the meal

Sorry, no particular theme but for multi-course elegance I vote for a cold fish course. Poached salmon with dill and/or cucumber sauce comes to mind or chilled shrimp of some description. Crab, lobster or mixed seafood salad served with avocado or tuna carpaccio. Book end this with a simple opener and a hot but unfussy entrée ( maybe grilled).
