In regards to using up leftover canned adobo, I puree the remaining can in the food processor and freeze it flat in a zip top bag, then I break off a square when I want to use it.

This is an interesting mash up, but I've cooked out of the Rachael Ray 365 30 minute meals cookbook since college and I always come back to this dish: http://www.rachaelraymag.com/recipes/rachael-ray-magazine-recipe-search/dinner-recipes/park-city-cashew-chicken

I made this recipe a few weeks ago for Carmelized Chipotle Chicken and loved it!

?????Adobo is a sauce- Chipotle peppers (smoked jalapenos) are commonly packed in it, could that be what you mean?

Yes. Have a can in pantry

Alternatively if you don't want to use an entire can of adobo peppers you can always freeze them. Plop them out of the can onto a piece of waxed paper or parchment and put in the freezer. Peel the plops off once frozen and put them in a plastic bag until you get a recipe that calls for an adobo pepper or two.

Thanks for this info. I often see recipes calling for small amounts of peppers and/or sauce and think I would not want to open an entire can to use 1 Tablespoon of the sauce.

Hi Lara,
there are some options if you search Food52. Here is a good basic one you can adapt if need be: https://food52.com/recipes/56293-sticky-chipotle-ribs . You can go wrong with those canned peppers.
