new ways to deep fry veal

Wanting to make a new fried veal sandwich and I feel like doing something else than the standard breadcrumb-style of frying the veal cutlets. Could a beer-batter work?

Thinking of making a balsamic mustard and gremolata to combine. What do you guys think?
