How do I best stretch 5 chicken legs? Arroz con pollo or paella? Any delicious recipe recommendations?

Five chicken legs aren't going to serve more than 5 people, no matter what you cook them with, unless you pull the meat off the bones and chop it. How far are you trying to stretch them?
