Cooking time and resting time of turkey

You'll want to let the turkey rest for a little after you take it out of the oven, so it's ok to have it ready a bit early. 1 to 2 hours might be a little long, so if you have the room in your oven, you could leave it in there at a very low temperature until about a half hour before you serve it so it can rest before you carve it.
