You make the dressing separately, a few hours or maybe even the night before, then toss everything together before serving. If necessary, the day before you could also probably cut the corn of the cobs, dice the cucumbers and peppers and crumble the feta the day before, keeping them separately in ziplock bags in the fridge for final assembly before serving the next day (again you can add the dressing a little before serving.
