Should I add more fat to old brownie recipe that called for "unswt.bakers chocolate" if now using Trader Joe's unsweetened chocolate w no fat? Thanks.

Is it their unsweetened chocolate that comes out for a limited run around holiday time (Single Origin Huila)? That does have fat... I don't know of any other unsweetened chocolate, though they do have an unsweetened cocoa...

Chocolate with no fat? That would be cocoa.

There is a substitution for using cocoa plus butter in lieu of unsweetened baking chocolate. Here is a link that gives a lot of substitution. Looks 3T cocoa and 1 T fat per oz. of chocolate. Good luck. liehttps://www.cooksillustrated.com/how_tos/5532-how-to-substitute-chocolates
