What do I do with the rock salt leftover from roasting beets in salt?

Dry it out in the oven and use it to rim a glass for bloody marys.
Or save it for the next time, and use it to roast potatoes on a salt bed.

Use it to roast other things in (potatoes, more beets, fish). Or, you can always salt your walkways with it!

Season things you that don't mind some earthy beet flavor infiltrating?
