It would be an unusual thing to do, but I don't see anything making it impossible- you'd have to make sure to get any residual grease off for the breading to stick well, and you'd want to cook them quickly, just to cook the coating and warm the chops (you'd probably want to bring them to room temp. to start). If you decide to give it a shot, let us know how it comes out.
